Shopify is the right choice if you have a small-to-medium catalog (< 500 products), want to manage everything autonomously, need to launch within 2 weeks, and don't have complex custom integrations.

Custom (Next.js + Stripe) is the right choice if you have complex integrations with internal systems, want total control over UX and performance, have high volumes where Shopify fees become significant, or sell non-standard products (services, bookings, subscriptions, tokenization).
